Paul's experience runs from professional kitchens and Club Med to hotels, pubs, restaurants, accommodation and remote operations across Ireland, the United Kingdom, Australia and Asia.
Most recently, that included responsibility for a complex remote operation supporting about 800 residents and leading around 70 people across catering, accommodation, housekeeping, facilities, maintenance and logistics.
